Why A Colorful Salmon Salad Deserves To Be On Your Table

Eating colorfully means eating bountifully!

More than just a pretty picture on your plate, foods of different colors nurture your body with an abundance of nutrients and phytonutrients. Phytonutrients are small chemical compounds produced by plants that help us digest larger nutrients and also play a role in removing toxins from our bodies.

Eating lots of colors on a daily basis is a smart way to flood your body with an abundance of nutrients and lower your risk of missing out on those that are vital to optimal health.

To create a plate full color, be open to experimenting while food planning, grocery shopping, and cooking!

Here’s one way to do it:

Recently, we baked an oven-ready tray portion of our sustainably-raised salmon with olive oil and a bit of freshly squeezed orange juice, and seasoned it with lots of cracked blacked, red, and white pepper.

Next, we served it on a bed of colorful salad featuring mixed greens and beet microgreens with multi-colored tomatoes, purple carrots, and edamame.

Finally, for the salad dressing, we squeezed the rest of the orange, and added some lime, balsamic, and olive oil.

And voilà! We enjoyed a truly delicious, nutritious, and diverse dinner.
