Salmon Hot Dog Spring Rolls with Spicy Peanut Sauce

Easy, versatile, and satisfying — you can make almost anything out of hot dogs—and spring rolls out of almost anything. INGREDENTS

For spring rolls:

  • 8 rice papers, 8-inch round 

  • 2 Jalapeno & Cheese Kvaroy Arctic Salmon Hot Dogs (or flavor of choice)

  • 1 Persian cucumber, julienned

  • 1 large carrot, julienned

  • 1/4 cup mint leaves

  • 1/4 cup cilantro leaves and tender stems

  • 1/2 cup microgreens or lettuce

For peanut sauce:

  • 1/2 cup smooth peanut butter

  • 1 tablespoon soy sauce

  • 1 teaspoon fish sauce

  • 1 garlic clove, finely grated or minced

  • 1/2 teaspoon finely grated ginger

  • 1 teaspoon sriracha 

  • 1/2 lime, juiced

  • 1 teaspoon sugar

  • 1/4 cup water

DIRECTIONS

Pan fry or grill Kvaroy Arctic Salmon Hot Dogs according to package instructions, and cut in half crosswise and then lengthwise, so you are left with four long quarters. 

Fill a large bowl with warm water. Dip a spring roll wrapper in the water until just pliable, about 30 seconds. Place the wrapper on your work surface.

Working on the bottom third of the rice paper wrapper, arrange quartered Kvaroy Arctic Hot Dog, a few mint leaves, cilantro sprigs, a few pieces of carrot, cucumber, and a small handful of microgreens. Fold the sides in, then roll up tightly. Continue with remaining ingredients.

To make the peanut sauce, mix peanut butter, soy sauce, fish sauce, garlic, ginger, sriracha, lime juice, sugar, and water together until smooth and well combined.

Serve spring rolls with peanut sauce for dipping.
