HAPPY NEW YEAR 明けましておめでとうございます!
While 2021 was a difficult year for myself and many others, I have a lot of hope and excitement for 2022. Oshogatsu (New Years) is one of the most important holidays in Japan and to celebrate the beginning of the new year, I made a Celebratory Salmon Bara Chirashizushi for part of my Osechi Ryori (traditional Japanese new year food) spread.
- 1 1/2 rice cooker cups of cooked & prepared sushi rice
- 1/2 pound Kvaroy Arctic Salmon, cubed
- Tamagoyaki (Japanese egg omelette), cubed
- Snap Peas, blanched & cubed
- Lotus Root, blanched, cut into discs, and trimmed to look like flowers
- Ikura (salmon roe)
- Tobiko (flying fish roe)
DIRECTIONS
Prepare the sushi rice.
Prep your ingredients.
In a bowl or on a plate, lay down the sushi rice. On top, place/scatter the ingredients across the rice.
Enjoy with your loved ones!
