What is Arctic After Dark?
Arctic After Dark is a two week culinary celebration across San Francisco and the Bay Area, inspired by the distinctive coastal environment of northern Norway, home to the cold, clear waters where Kvarøy Arctic salmon is raised. It runs October 1 to 18, during National Seafood Month, the celebration brings Seafood from Norway to the center of the table through exceptional salmon and creative culinary experiences.
By October, the region is already turning toward its darkest months, when vivid night skies and the natural glow of the Northern Lights create a striking sense of atmosphere and seasonality.
You're invited to experience that spirit through chef-crafted dishes at some of the Bay Area's most visionary restaurants. Each chef brings their own style and interpretation of Kvarøy Arctic salmon, resulting in a collection of unique, two-week-only menu features that showcase the versatility and quality of Norwegian seafood.

What’s special about the Kvarøy Arctic salmon is that it has a really nice silky, buttery flavor, rich flavor… What’s beautiful about the dish is the way the char complements the bright, rich flavors that we’re seeing today in Sonoma County produce.

Pan-roasted Kvarøy Arctic salmon served over creamy asparagus risotto, brightened with preserved lemon and finished with herbes de Provence oil. A fresh, elegant dish balancing the richness of the salmon with the vibrant flavors of late summer.
I’ve used a lot of different salmons, a lot of farm-raised salmon, and the Kvarøy Arctic salmon stands out in particular to me. It’s from Norway, and the texture that it brings and the flavor is different than other farm-raised salmon I’ve used. The buttery texture and the flavor is something I haven’t experienced.

Kvarøy Arctic is right up there when you are talking about pristine seafood, right? It’s sustainable, it’s fresh, it’s exactly what you find out in the wild. It’s buttery, you can sear it, it’s got a nice crunchy texture on the outside and a nice soft texture on the inside, served medium rare, of course. It is absolutely amazing.

October 1 through October 18, 2026. Featured dishes are available for those two weeks only, and menu availability can vary by night, so booking ahead is recommended. October is also National Seafood Month, which makes it a natural time to celebrate salmon at its best.

Arctic After Dark brings together some of the Bay Area's most accomplished culinary talent, a collection of esteemed chefs whose creativity, craft, and vision set the tone for exceptional dining in the region. And for diners who appreciate extraordinary salmon, this is a rare chance to experience one of the world's finest, Kvarøy Arctic, interpreted through the distinctive styles of these remarkable chefs.
At Bijou in Petaluma, Chef and Co-Owner Steven Vargas grills the salmon over binchotan and serves it with charred yellow corn and Jimmy Nardello pepper succotash and a tomato beurre blanc, built around the late-season bounty of Sonoma County.
At Dragon Well, Co-Owners Christina Tan and Gary Tan have been cooking on Chestnut Street since 1998. Their salmon is steamed in a light sauce of black beans, soy and rice wine, served with spinach and finished with red chili pepper and scallions.
At The Grove Speakeasy in Penngrove, Chef Gus Vega serves the salmon crisp-skinned over corn succotash and lobster bisque with end-of-summer tomatoes and basil, using produce from farms just outside the door.

How do you say Kvarøy?
Kvarøy is pronounced "Kwa-ray." It's the name of the island in Norway's Arctic Circle where the Olsen family has farmed salmon since 1976. Three generations of the family have now worked the same stretch of water, close to fifty years. You will also see it written as Kvaroy without the ø.
