Salmon Hot Dogs with Creamy Turnip Green Topping

Sloppy Joes are reinvented with healthy salmon dogs and a creamy nutrient loaded greens topping. Local Southern turnip greens replace spinach in this easy recipe. Throw the salmon hot dogs on the grill, place in a garlicky grilled brioche bun, and top with the creamy turnip “dip.”

INGREDIENTS

  • 4 Kvaroy Arctic Salmon Hot Dogs

  • 4 Brioche Buns (or your favorite hot dog bun or bread)

  • Butter

  • Garlic powder 

  • 2 tablespoons oil

  • 1/3 cup chopped onion

  • 1 bunch (4 cups) fresh chopped turnip greens (collards, kale or spinach)

  • 2 tablespoons red wine vinegar

  • ¼ cup cream cheese

  • 2 ounces (1/2 cup) grated Romano or Parmesan Cheese

  • Salt and pepper

DIRECTIONS

Smash hot dogs and grill 5 minutes on each side.  

Spread buns with butter and sprinkle with garlic powder, grill or broil until browned and crispy.

Heat oil over medium heat in a nonstick skillet. Add onion and saute 5 minutes. Add greens and cook 5-10 minutes until wilted, stirring occasionally. Add vinegar and stir. Lower heat and add cream cheese. Cook 5 minutes, stirring. Add cheese, salt and pepper.  

Place salmon dogs in bun or atop bread; top with greens.
